Broccoli Stir-Fry with Chicken and Mushrooms

Chop, Fry, or Boil: Eating for One, or 6 Billion

I used carrots instead of mushrooms.

2 tablespoons vegetable oil
2 tablespoons minced garlic
1 tablespoon minced fresh ginger
4 scallions, chopped
1 lb broccoli, trimmed and cut into bite size pieces
8 oz mushrooms, cleaned, trimmed, sliced
salt
1 cup water
8 oz boneless skinless chicken breast, cut into 1/2 inch pieces
2 tablespoons soy sauce
black pepper
